Ri-Cipe: Wait…This counts as dinner?! Salad

(Inspired by Panera’s strawberry poppyseed summer salad)

I have made this salad so many different times this summer and tweak the ingredients every time (as you can see in the pictures). I serve it as the main course or as a side and it’s a hit every time! Try it…you’ll like it =]

Ingredients:
•One head of green leafy lettuce or a heart of romaine

About one cup of the following
•Strawberries
•Pineapple
•Blueberries
•Oranges (or canned mandarins)
•Any other fruit you’d like to add. Or vegetable. Or nut/seed.

•Poppyseed dressing
You can buy it or make your own!
Dressing ingredients:
.5C mayo (I hate mayonnaise, but just trust me–this is good)
.25C fat-free milk
.25C sugar substitute
.125C white vinegar
2teas. poppyseeds
Whisk all 5 ingredients in a small bowl and set aside.

Prepare to be amazed!
As always, wash your hands!

1. Cut your lettuce into pieces that will fit into your mouth (tear it if you want to let some of that “It’s been one of those days” steam out) Place into a zip-top bag.

2. Slice your strawberries and segment your oranges if you’re allergic to mandarins, like me! Make sure the piña is it small (pizza-topping sized) pieces. Add all (washed) fruit and extras to the bag.

3. Add some dressing (maybe .25C) to the bag. Zip the top and shake it! Leaving air in the bag for this process is a good idea.

4. Serve it on a big plate and DIG IN!
Be adventurous with this salad. Try adding cheese, corn, red peppers, or other things to it. If you want protein, add sliced leftover grilled chicken to the top!
